What’s in the Veggie Garden?

Have you been walking in your garden lately?

Mine is like a jungle out there. The garden is overflowing with produce (and weeds). It’s funny, I don’t think I planted my rows closer than last year, but there is no doubt that the leaves of everything are way bigger than last year!

If you look at the photo above you’ll see in the back is corn and in front of the corn is zucchini, beets, beans and onions.

On the other side of my onions were 2 double rows of peas. They’re finished now and I’ve pulled the vines and fed them to our sheep. The sheep loved the vines so much!

What’s come in from the garden so far?

My garden goal for the last number of years has been to put up as much into the freezer as I can. This means lots of produce is heading into the freezer these days.

So far I’ve put 136 cups of peas and 55 cups of beans into the freezer. That’s it for the peas, but the beans I’ve only done 1 picking so far!

What else are we eating?

We’re eating potatoes, beets and onions now as well and they sure beat older stored veggies!

I just love fresh potatoes boiled with lots of butter and salt and pepper! But the other way we love to use them is roasted in the oven. I put potatoes, onions, beets and garlic all together in a pan, top with Montreal Steak Spice and butter, then roast them at 400F till cooked and brown.

What’s coming next?

Corn is coming soon! It’s so close. I have to remind myself that it’s still early and I’m not usually picking it till late August or Early September. So I need to be patient!

What about the fruits?

This is our third growing season here and my raspberries are hitting their stride. So far I’ve put 7 large gallon Ziploc bags into the freezer for smoothies and desserts over the winter. I love raspberries and this makes me so happy.

I haven’t had any large quantities of fruit in my freezer for years. So I’m really looking forward to using them this winter.

My strawberries on the other hand are disappointing. 3 years ago when I planted my strawberries I chose 3 varieties I had never grown before despite knowing that my favourite strawberry for production is the Seascape variety.

I should be getting huge amounts of berries this year, but I'm not. So these plants will be taken out this fall and I’ll be planting new Seascape berries for next year (Bare-root strawberries will be available in the greenhouse next year too).
